Egg Roll Cups
Ingredients:
1 pkg of diced, white chicken
1 pkg of frozen broccoli & cheese
1 lg red pepper, diced
6 green onions, diced
1 can Rotel tomatoes 
1 pkg egg roll wraps
Shredded cheese (American)

1. Use cooking oil spray and spray muffin pans.
2.  Place egg roll wraps in each muffin cup.
3.  In a 350 degree skillet, cook diced chicken, add broccoli, onions, red pepper, Rotel tomatoes and tender.
4.  By spoonfuls, transfer chicken mixture into each egg roll wrap.
5.  Add shredded cheese to the top of each wrap.
6.  Fold over the edges & bake in a 350 degree until wraps are brown.  Serve.
Makes 20 Egg Roll Cups
